Mum & Me Delights: mama me-time
It’s time to bake with Mama!
Who says only mothers have the kitchen pass? It’s time to get your little ones experience the fun in
making their own scrumptious creations!
Lemon Cupcakes
For the cupcakes
2 ½ cups all-purpose flour
1 cup butter
2 cups sugar
4 eggs
1 cup milk
1 tsp vanilla extract
1 tsp baking powder
½ tsp baking soda
For the icing
1 cup butter
3 cups icing sugar
2 tbsp fresh lemon juice
1 Preheat oven to 180C.
2 In a large bowl, cream the butter and the sugar until velvety. Add one egg at a time, then add the
dry ingredients in two parts - alternating with the milk and vanilla extract.
3 Spoon the batter into the cupcake tray, filling the about 2/3 of the cupcake paper.
4 Bake for 20 to 24 minutes, or until you insert a toothpick and it comes out clean.
5 Take the cupcakes out of the tray and let them cool before you start to ice them.
For the icing
In a bowl, beat the butter and icing sugar until creamy. Add the lemon juice and mix well until the icing
is smooth and even.
Note to Mum: Indulging every once in a while isn’t so bad. Best prepared with your youngster, it’s
likewise best munched together…
